I've had vegan cake a few times, and each time I've thought, "well, this is ok, but it doesn't taste like REAL cake." Since I was able to make pancakes that taste like real pancakes with just a few simple substitutions, I thought "why can't I make those same substitutions in a cake recipe?" Well, turns out I can. My first experiment was with Smitten Kitchen's Strawberry Summer Cake.
I substituted 1/4 cup of applesauce for the egg in the recipe, used soymilk for the 1/2 cup of milk and Earth Balance vegan butter, of course. Although my impatience caused me to mangle it a bit getting it out of the pan, the boyfriend took one bite and told me "it's phenomenal." Phenomenal! Yay!
